Sensory analysis in the food industry

Abstract


In the food sector, sensory analysis have a great importance for assessing the acceptability marketing and product quality, being part to the quality control plan in the industry. It is through the sense organs that make such assessments, and they are per formed by people, i t i s important a careful preparation of the samples tested and proper application of the test to avoid the influence of psychological factors, such as colors that can refer to pre-formed concepts.
