DETECTION OF FRAUD IN COOLED RAW MILK OF RIO POMBA, MINAS GERAIS

Abstract


The aim of this research was to evaluate the physical-chemistry quality and presence of undesirable and fraudulent substances in cooled raw milk of expansion tanks of Rio Pomba, Minas Gerais. Samples of cooled raw milk from 20 expansion tanks of Rio Pomba were collected in three repetitions and transferred to the laboratory of physical-chemistry analyzes of Instituto Federal de Educação, Ciência e Tecnologia do Sudeste de Minas Gerais in order to verify the physicalchemistry quality, conservatories and/or inhibitors substances, acidity decrease substances, density reconstitutes and whey quantification. Cooled temperature of milk in the expansion tanks changed from 4.0 to 7.0°C. It was verified that 48.3% of samples were in disagreement with standards established by Instrução Normativa n° 51 in relation to physical-chemistry characteristics evaluated. It was detected formic acid, nitrate, chloride, urine and sucrose, besides matter in raw milk samples. Also, it was verified that 44.0% of raw milk samples contained more than 2.0% of whey. Therefore, it was observed that bulk raw milk quality of Rio Pomba is compromised and that it is necessary adoption of good agricultural practices in order to obtain raw milk with better quality.
